Simple Avocado Taco Boats

Take your Taco Tuesdays to the next level with these simple and delicious avocado taco boats. These are a great low carb option for the whole family. You can easily tweak the recipe a little bit to lower the carbs even more and make it a keto meal as well!
Avocados are a veritable treasure trove of nutrients, some of which are particularly good for those with MTHFR as they help support the enzyme pathways. This includes Vitamin C, Vitamin E, Copper, Potassium and Folate. Avocados are also a great source of antioxidants which helps to manage the oxidative stress those with MTHFR and Pyrrole are prone to.
Just like other fruits avocados are high in water (75%) but remain nutrient dense. They are rich in fibre and healthy fats while naturally low in sugar and sodium.
My family all love this meal and I actually tweak it a bit for myself as I’m sensitive to avocados and get hives when I eat too much. I take the little bit that I scoop out of the avocados for the boats and use that and serve my portion over lettuce with just a touch of avocado. So no waste and we are all happy!

Ingredients
- Mexican Beef:
- ½ lb. Ground Beef
- ½ tsp Ground Chilli Powder
- ½ tsp Paprika
- ½ tsp Ground Cumin
- ¼ cup Passata (pureed tomatoes)
- ½ cup Mozzarella (shredded)
- Fixins:
- ½ Cucumber (diced)
- 4 oz Cherry Tomatoes (chopped)
- ½ Red Onion (diced)
- 1 oz Jalapeno Peppers (pickled, diced)
- ½ Lime (juice only)
- ½ cup Sour Cream
- 2 Avocados (halved and pitted)
- 1 oz Cilantro (chopped) (optional for the cilantro haters)
Directions
- Step 1
- To make salsa, combine cucumber, cherry tomatoes, onion, jalapenos and lime juice in a bowl. Gently combine and set aside.
- Step 2
- Over medium heat, add ground beef to a skillet and brown. Once browned add chilli, paprika, cumin and passata. Cook until beef until done.
- Step 3
- Add mozzarella and stir through until melted. Take off the heat.
- Step 4
- To assemble the taco boats, use a spoon to gently enlarge the indent left by the pit. Fill with taco meat, top with salsa, sour cream and cilantro. Enjoy!
